CHILE RELLENOS CASSEROLE
(Serves About 6)
1 lb. hamburger
1 c. half and half
2 eggs
1/3 c. flour
7 oz. can whole green chilies
1/2 lb. Monterey Jack cheese,
grated
1 (8 oz.) can tomato sauce
1/2 lb. Cheddar cheese, grated

Brown hamburger and drain. Add some onion and spice for
Mexican taste like taco seasoning packets. Add water and a
little bit of the tomato sauce for the right consistency.
Preheat oven to 375 degrees.
Beat half and half with eggs and flour until smooth.
Split open chilies; rinse out seeds and drain on paper towels.
Cut chilies into thirds.
Mix cheeses together and reserve 1/2 cup for topping.
Using a deep 2 quart casserole, make alternate layers of
hamburger, cheese, chilies and egg mixture (put a small amount
of cheese on the bottom of the casserole). You should be able
to layer twice. Pour tomato sauce over top and sprinkle with
reserved cheese. Bake 1 hour or until done in center. Serve
with hot corn bread or tortillas and a green salad.
