EASY CHOP SUEY

1 lb. lean pork chops
1 can sliced mushrooms,
undrained
1 1/2 c. chopped celery
1 large onion, chopped
1 large green pepper, chopped
1 lb. bean sprouts
cornstarch
soy sauce
rice or Chinese noodles

Brown in heavy skillet the pork chops. Add mushrooms
(save juice for gravy). Brown 1 minute. Add celery and onion.
Cook 5 to 8 minutes. Stir often to prevent sticking. Add
green pepper. Add bean sprouts. Continue to cook 4 to 5
minutes.
Gravy: Put 2 cups liquid (water and juice from mush-
rooms) in a bowl and add 3 tablespoons cornstarch and 3 table-
spoons soy sauce. Add gravy to skillet and cook until gravy
turns glossy. Serve over rice or Chinese noodles.
