1 large onion, chopped (1 c.)
1 clove garlic, minced
2 Tbsp. salad oil
1 can red kidney beans
2 tsp. salt
12 tortillas or more
1 can chili con carne without
1 lb. ground beef
1 can tomatoes
1/4 tsp. pepper
1 c. grated Cheddar cheese

Saute onion and garlic in oil until soft; remove with
slotted spoon. Make 1 large patty with ground beef; fry and
break up into chunks. Stir in onion mixture, tomatoes, beans,
chili, salt and pepper. Heat to boiling. Place 3 tortillas,
overlapping in a 12 cup baking dish. Top with a layer of
mixture and cheese; repeat to make 4 or 5 layers or more. Bake
at 400 degrees for 30 minutes. Serves at least 6.
This freezes well. Can use extra cheese. May leave out
the kidney beans and use chili con carne with beans. To
reheat, may add more tomatoes and put in oven.
