6 medium potatoes
1 1/2 lb. ground beef
2 onions, chopped
1 c. milk
salt and pepper
Peel and slice the potatoes. Saute the onions; add
ground beef and cook until browned. Season to taste. Place a
layer of potatoes on bottom of casserole; add a layer of meat
mixture. Continue layering until all ingredients are used.
Beat together eggs and milk; pour over meat and potatoes. Bake
at 350 degrees for 1 hour. Makes 6 servings.
Variation: Green beans can be substituted for the
potatoes. I like the canned French-sliced green beans.
