NEW MEXICAN RED CHILE 1 Tbsp. shortening 2 lb. cubed beef, pork, elk or deer or combination 2 Tbsp. flour 1 clove garlic, minced salt to taste 6 Tbsp. red chili powder 1/2 c. diced green chili (fresh, frozen or canned) 1 tsp. oregano 1/2 tsp. cumin 1/2 tsp. black pepper 2 c. water Melt shortening. Add meat and flour; brown meat. Place meat mixture in crock-pot. Add remaining ingredients. Mix well. Cook on low for at least 5 hours. Add flour or finely grated potato to thicken. Chile can be prepared in the morning before work. Serve with refried beans or pinto beans and warm flour tortillas. Sprinkle with Cheddar cheese.
