PEON FOOD Sauce: 1 medium can stewed tomatoes 1 medium can tomatoes 1 medium onion, chopped fine 3 to 4 garlic beans, crushed or chopped fine 6 to 8 hot green chilies, chopped fine 1 tsp. salt 1/2 tsp. sugar lots of black pepper 1 shake ground sage 2 shakes oregano Meat Dish: 5 lb. hamburger, sauteed 4 garlic beans, crushed or chopped fine 1 to 2 small cans tomato sauce chopped green pepper (optional) salt and pepper 1 medium can whole corn 1 medium can zucchini chunks aged American cheese or sharp Cheddar Sauce: Serve at room temperature. Store in glass jar. Will keep 3 to 4 weeks. Meat Dish: Drain hamburger; add garlic, tomato sauce, green pepper, salt and pepper. Simmer a long time. One and one-half hours before serving, add corn and zucchini. Heat and add cheese. Let melt barely. Beans: Soak pinto beans overnight. Boil with onion, salt and pepper. Simmer all day or until not too soupy. Add cheese just before serving. Serve with flour tortillas. Tear tortilla into fourths and make a cone; spoon beans, hamburger and sauce into cone. Eat with fingers.
