SAUSAGE-PEPPERONI PIZZA Dough: 2 1/2 c. flour 1 1/2 tsp. salt 1 tsp. sugar 4 to 5 Tbsp. shortening 1 to 2 pkg. dry yeast 1 c. very warm water Topping: 1 lb. sausage (regular or Italian) 1 pkg. pepperoni 1 lb. Mozzarella cheese 1 lb. Monterey Jack cheese 1 large (15 oz.) can tomato sauce 2 Tbsp. Italian seasoning Mix flour, salt and sugar in large bowl. Add shortening and mix with fingers until it resembles rice. Put very warm water in measuring cup and add yeast. Mix well. With hands, mix yeast-water with flour mixture thoroughly. Add enough flour to form dough ball and knead until texture is smooth. Cover with tea towel and let rise in warm area (about 20 to 30 minutes). Lightly brown sausage and drain. Mix Italian sausage with tomato sauce. Slice cheese. Grease two pizza pans; divide dough in half and press into pans. Equally divide sauce and pour on top of crust. Place some cheese slices on top of sauce, followed by pepperoni and sausage. Bake at 450 degrees until crust is light brown. Add rest of cheese and finish baking until crust is golden brown.
