WILD RICE AND GROUND BEEF CASSEROLE

2/3 c. (4 oz.) wild rice
1 lb. ground beef
1 large onion, sliced
1 c. sliced celery
1 tsp. salt
1/4 tsp. pepper
1 can mushrooms and liquid
1 can mushroom soup
1 (6 oz.) can sliced water
chestnuts
2 Tbsp. oil

Fry meat, onion and celery in oil until meat is partly
cooked. Add mushrooms and soup. Let simmer for few minutes.
Add salt and pepper. Wash rice and place in saucepan with 3
cups cold water and 1/2 teaspoon salt. Bring to boil for 1
minute, then simmer about 45 minutes or until rice is tender.
Drain rice and combine with meat mixture. Place in greased
casserole and bake at 350 degrees for 45 minutes. Serves 5 to 6.
