TAMALE PIE 1 onion, chopped 1 green pepper, diced 1 Tbsp. shortening 2 (8 oz.) cans tomato sauce 1 (12 oz.) can corn 1/2 c. ripe olives, chopped 1 clove garlic, minced 1 Tbsp. sugar 1 tsp. salt 1 tsp. pepper 1 tsp. chili powder 1 1/2 c. shredded cheese 3/4 lb. ground beef 3/4 c. cornmeal 1/2 tsp. salt 2 c. cold water 1 Tbsp. butter Cook onion and green pepper in shortening until tender. Add meat and brown. Add tomato sauce, corn, olives, garlic, sugar, salt, pepper and chili powder. Simmer for 20 minutes. Add cheese, stirring until melted. Pour into a 10 x 6-inch greased baking dish and set aside. Stir cornmeal and salt into water. Cook and stir until thick. Add butter. Spoon over meat mixture in strips. Bake at 375 degrees for about 40 minutes. Serves 6 to 8.
