(Chicken a la Murray)
4 or so, deboned chicken
same number of whole pimentos
Mozzarella cheese, sliced
12 oz. white cooking wine
1 large onion (optional)
artichoke hearts (optional)
Pour wine in electric skillet. Add 1 tablespoon butter.
Add onions sliced into strips. Heat wine and onion until hot
(300 degrees). Add chicken. Cover and cook, turning once until done.
Remove chicken, turn up heat and thicken sauce with flour or
cornstarch. (Add mushrooms and artichoke hearts.) Replace
chicken, heat down to 250 degrees; cover each piece with whole pimen-
to, then slice of cheese. Cover and heat until cheese melts
