DUCK BREASTS 2 to 4 duck breasts celery 1/2 to 1 stick butter or margarine 1 c. wine or 1/2 c. Triple Sec Wash and pat dry duck breasts. Slice celery, enough to cover bottom of baking dish. (Amount of celery depends on number of duck breasts used.) Place celery in bottom of baking dish, lined with foil. Slice butter over celery (again amount depends on number of duck breasts used). Place duck breasts over celery and butter. Pour wine or Triple Sec over duck breasts. Bake in 350 degrees oven for approximately 1 1/2 to 2 hours or until meat is tender. To keep meat moist, pour juice in pan over meat about every 15 minutes.
