2 Tbsp. cooking oil
1 clove garlic
1 onion, chopped
3/4 lb. ground beef
3 medium tomatoes, chopped
1 small can tomato sauce
1 can chicken stock
1 (8 oz.) carton cottage
cheese or Ricotta cheese
1/4 lb. Monterey Jack cheese,
4 corn tortillas
7 oz. can Ortega whole chilies
Saute garlic and onions. Brown beef and pour off fat;
add garlic, onions, tomatoes, chicken stock and tomato sauce to
meat mixture; set aside. Combine cottage or Ricotta cheese
with egg and grated Monterey Jack cheese. In a greased casse-
role, alternate layers of tortillas, meat mixture, chilies and
cheese mixture. Bake in 350 degrees oven for 25 minutes. Cool 10
minutes before cutting.
