AMERICAN CHICKEN CURRY 4 lb. frying chicken pieces 3 tsp. curry powder 3/4 c. chopped onion 1 large or 2 small cloves minced garlic 2 apples, cored, peeled and cubed 1 banana, peeled and cubed 1 1/2 c. yogurt 1 c. stewed tomatoes (with liquid) 2 bay leaves salt and pepper to taste Remove skin from chicken and brown in skillet. Sprinkle with curry; reduce heat and cook additional 10 minutes. Add all other ingredients, except yogurt and cook 45 minutes to 1 hour (until chicken is cooked). Serve over rice (basmati, aromatic Indian rice is recommended). Either add yogurt to curry just prior to serving or serve as condiment. Hint: Basmati rice is often available at health food stores.
