1 frying chicken, cut up
1 large onion, diced
1 clove garlic, minced
1/2 c. celery, diced
1/2 c. carrots, diced
1/2 c. chicken broth
1/2 c. white wine
salt and pepper to taste
3 Tbsp. oil
Brown chicken on all sides in oil. When brown, remove
to casserole. In same pan, saute garlic, onion, celery and
carrots. Add broth and wine, scraping sides and bottom of
pan. Pour over chicken in casserole. Cover and bake at 350 degrees
for 1 hour.
