MOO GOO GAI PAN

3 Tbsp. peanut or vegetable
oil
1/4 lb. snow peas or 2 c.
sliced celery
1 c. mushrooms, sliced
4 green onions with tops in
1-inch pieces
1 tsp. cornstarch
1/2 tsp. salt
1/4 tsp. ginger
1/8 tsp. white pepper
3 chicken breasts, cut in
1-inch pieces

In wok or electric fry pan, add 1 tablespoon oil. Set
heat control at 350 degrees; add snow peas, mushrooms and onions.
Stir-fry 2 minutes; remove to bowl. In small cup, mix corn-
starch, salt, ginger and pepper; set aside. Add remaining 2
tablespoons oil to pan. Add chicken and cornstarch mixture.
Stir-fry until chicken turns white. Stir in mushroom mixture
and soy sauce; stir-fry until hot.
Optional: broccoli flowerets, chestnuts and bean
sprouts.
