WILD CHICKEN-GOURMET DELIGHT 1 pkg. Uncle Ben's long grain and wild rice 8 (1/2) chicken breasts, no skins 1/4 c. flour 1/4 tsp. ginger 1 onion, chopped 1 bay leaf 1 split champagne or white wine (1 cup) 1 (8 oz.) can green grapes salt and pepper 1/4 c. butter 2 to 4 carrots, peeled and quartered 1 c. heavy cream Shake chicken in bag with flour, salt and pepper. Brown chicken slowly in butter. Add onions, carrots, bay leaf and wine, cover and simmer 25 minutes or until chicken is tender. Cook Uncle Ben's rice according to directions on package. Add cream and grapes to sauce. Serve on Uncle Ben's rice with another vegetable and a jello fruit salad. Makes 4 servings.
