BAKED LAMB IN FOIL OR PARCHMENT 3 lb. lamb, cut into single serving portions salt (optional) and pepper 1/2 lemon, squeezed over lamb 2 Tbsp. olive oil 1 onion, chopped 3 scallions, chopped 1 ripe tomato dill weed, about 1 tsp. or to taste 1 lb. Feta cheese chopped garlic to taste (at least 1/2 clove per packet) Saute chopped onions in hot olive oil. Add tomatoes, salt, pepper and about a teaspoon dill weed. Cook until soft and just turning brown. Cut squares of foil or parchment large enough to hold 1 serving with room to fold. Place meat in center of square and spoon sauce over meal. Place a slice of Feta cheese on top according to your taste. Top this with desired amount of garlic (chopped). Wrap securely. (Butcher- style wrap is best.) Place packets in baking pan and bake at about 375 degrees for 2 hours or until tender.
