BARBARA'S JAMBALAYA
(Fish)
2 lb. raw deveined shrimp
3 sticks hot smoked sausage
1 (6 oz.) can whole tomatoes
1 can tomato paste
2 onions, chopped
2 stalks celery, chopped
1/2 green pepper, chopped
2 Tbsp. flour
2 Tbsp. oil
8 c. hot cooked rice
2 Tbsp. margarine
4 c. water

Melt margarine in saucepan. Saute onions, celery and
green pepper until tender. In separate small frying pan, brown
flour in hot oil. Add flour to vegetables along with water,
tomatoes and tomato paste. Slice and brown hot sausage; add to
saucepan. Simmer for 2 hours. Add shrimp and cook for 5
minutes. Add rice; mix and cook for 10 minutes in order to
blend flavors. Serves 8 or 4 Cajuns.
