CRUSTY SALMON CROQUETTES

1 (1 lb.) can salmon
1/2 c. chopped onion
2 Tbsp. melted butter
2 Tbsp. flour
1/2 tsp. salt
dash of pepper
2 c. cooked rice
1/2 c. milk
1 egg, beaten
1/2 c. grated cheese
1 c. breadcrumbs
1/4 c. melted oil or fat
lemon slices
parsley sprigs

Drain and flake salmon. Cook onion in butter. Blend in
flour. Add milk gradually and cook until sauce is thick,
stirring constantly. Add rice, egg, salt, pepper, cheese and
salmon. Chill several hours. Shape into cones. Roll in
crumbs. Place on a well greased cookie sheet. Pour oil over
cones. Bake in a hot 500 degrees oven until lightly browned, 10 to 15
minutes. Remove from oven and place on serving tray, using
lemon slices for garnish and parsley sprigs.
