QUICK QUICHE 1 "deep dish" pie crust 3 eggs 12 slices bacon 6 oz. Swiss cheese 1/2 c. Cheddar cheese, cut up 1/3 c. onion, cut up small 2 c. light cream (20%) or whipped cream 3/4 tsp. salt 1/4 tsp. sugar 1/8 tsp. red cayenne pepper (if you have) To prepare ahead of time: Cut cold bacon into small pieces. Fry bacon, drain grease; refrigerate if to be used later. Cut up Swiss cheese and Cheddar (Colby can also be used). Cut up onion. Heat oven to 425 degrees. Sprinkle 1/2 bacon, both cheeses and onion in pie crust. Repeat with remaining bacon, cheeses and onion. With beater, blend remaining ingre- dients. Pour into pie crust (throw away whatever is left). Bake 15 minutes. Reduce temperature to 300 degrees. Bake 30 to 35 minutes longer or until knife inserted 1-inch from edge comes out clean. Let set 10 minutes before cutting.
