RICE WITH CHICKEN AND CHEESE|
1 medium onion
1 Tbsp. fat or oil
3 c. water or chicken broth
1 c. uncooked rice
1 c. cut up cheese
1 1/2 c. cut up, cooked
Chop onion and cook in fat or oil until tender. Add
water or chicken broth. Heat to boiling and add rice. Lower
heat; cover and cook slowly for 20 minutes. Add chicken,
cheese, salt and pepper and cook over very low heat until
cheese melts. Makes 6 servings, about 2/3 cup each.
