QUICHE LORRAINE

4 slices crisp bacon, chopped
4 thin slices onion sauteed
until soft
8 paper-thin slices ham,
shredded
8 paper-thin slices imported
Swiss cheese
3 eggs
1/4 tsp. dry mustard
1 c. light cream, heated
nutmeg

Prepare your favorite recipe for pie crust and line an
8-inch pie tin with pastry. Bake at 450 degrees for 10 minutes.
Sprinkle the bacon and onion over bottom of pie crust. Add 1/2
the shredded ham, 4 slices of the cheese spread over the ham.
Add rest of ham and the cheese on top. Beat the eggs and
mustard. Add the hot cream and continue beating. Pour over
the ham and cheese; let stand 10 minutes. Sprinkle a tiny bit
of nutmeg on top and bake at 350 degrees until custard is set. Yields
6 servings.
