1/2 lb. bacon
1 (9-inch) uncooked pastry
1/4 lb. Swiss cheese, shredded
2 c. milk or light cream
1 tsp. salt
1/16 tsp. cayenne pepper
Fry bacon until crisp; crumble into pastry-lined pie
pan. Arrange cheese over bacon. Beat eggs slightly; add
remaining ingredients. Blend and pour over cheese. Bake at
400 degrees for 35 to 45 minutes; do not overbake. Remove from oven
while center is still soft. Cool for 5 to 10 minutes before
serving. Yields 6 servings.
