SUSIE'S SOUFFLE

3/4 c. flour
3/4 c. milk
2 eggs
pinch of salt
1/4 c. butter (not oleo)

Mix together in a bowl flour, milk, eggs and salt. Do
not overbeat. Heat butter in an ovenproof 10-inch or 12-inch
metal pan. When butter is frothy, pour in the batter and place
in a cold oven. Turn heat to 450 degrees and bake 20 minutes. Reduce
heat to 350 degrees and bake 25 minutes longer, or until popover is
brown and ripply. Excellent served with warm syrup or your
favorite jams! Serves 2 to 4.
