GUADALAJARA BUFFET

1 lb. ground round or chuck
1 medium onion
1 can (8 oz.) tomato sauce
1 can (8 oz.) water
1 (6 oz.) can tomato paste
3 (6 oz.) cans water
1 tsp. cumin seed
1 tsp. oregano
1 tsp. chili powder
1 clove garlic, minced
1/2 c. rice (brown is best),
cooked
2 tsp. sugar

Brown ground round with onion. Add tomato sauce, paste
and water. Add seasonings. Simmer 30 to 40 minutes. Add
cooked rice; simmer additional 10 minutes. Serve hot over
Fritos or other corn chips. May use toppings of grated cheese,
black olives, avocados, taco sauce and lettuce. Great for
large groups!
