1 lb. ground beef
1 medium onion, chopped
1 (15 oz.) can kidney beans
1 tsp. salt
1/2 tsp. chili
1/2 tsp. oregano
1 c. sour cream
1 c. small curd cottage cheese
1 c. Cheddar cheese, shredded
1 c. corn chips
Brown ground beef in skillet. Blend cottage cheese and
sour cream. Add to beef, chopped onion and kidney beans
(drained and rinsed in cold water). Stir in tomato sauce and
seasonings. Place 1/2 cup corn chips in bottom of casserole.
Empty beans in dish. Spread cottage cheese over meat and then
shredded cheese over that. Bake in oven 30 minutes at 350 degrees.
Sprinkle with rest of corn chips. Use 2 quart casserole for
