SOLE ALMONDINE

6 to 8 fillets of sole
seasoned bread crumbs
1 egg, beaten
garlic to taste
1/2 c. white wine
1/2 cube butter
1 pkg. sliced almonds

Dry sole with paper toweling. Beat egg with garlic and
tablespoon ice water. Dip sole in egg mixture, then in bread
crumbs. Let sit for 5 minutes. Melt 4 tablespoons butter in
skillet. Brown sole in butter and cook until done. Remove
from pan. Add remaining butter to pan and when bubbly, add
wine and almonds. Let cook down for a couple of minutes, then
pour over the sole. Serves 3 to 4.
