QUICHE LORRAINE

1 (9-inch) pie shell
6 slices bacon
1/2 c. grated Swiss cheese
2 green onions, sliced
1 1/2 Tbsp. flour
1/4 tsp. salt
1/4 tsp. nutmeg
2 c. half and half
4 eggs, beaten
dash of cayenne pepper

Cook bacon in microwave. Crumble. Cook shell in
conventional oven. Sprinkle bacon, cheese and onion in shell.
Combine flour, salt, nutmeg, cayenne and small amount of half
and half to make paste. Add rest of milk and heat 4 minutes on
High in microwave. Stir hot mixture into eggs. Pour in crust.
Bake in microwave 3 minutes 45 seconds or until mostly set.
Let stand 10 minutes before serving.
