SPICE BAJA RICE 1 c. chopped onions 4 Tbsp. butter 4 c. rice 2 c. sour cream 1 c. cottage cheese 1 bay leaf salt and pepper to taste 2 (8 oz.) cans whole chilies, unseeded, cut into strips 2 c. grated Cheddar cheese In a large frying pan, saute onions in butter until limp. Add rice, sour cream, cottage cheese, bay leaf, salt and pepper; mix together. In greased casserole, put a layer of rice mixture, layer of chilies and 1/2 cup cheese alternately. Repeat, ending with a layer of rice. Bake at 375 degrees for 25 minutes. Remove; sprinkle remaining 1/3 cup cheese and top. Bake 10 minutes longer.
