SCHNITZ-UN-KNEPP 1 pt. dried apples (Schnitz) 3 lb. smoked ham 2 Tbsp. brown sugar 2 c. sifted flour 1 tsp. salt 4 tsp. baking powder 1 beaten egg 2 Tbsp. melted butter 1/2 c. milk water Wash dried apples; cover with water and soak, 12 hours. Place ham in pot; cover with cold water and boil 2 hours. Add apples and water. Boil 1 hour; add brown sugar. In bowl, combine flour, salt and baking powder. Add egg (beaten), butter and milk; beat well. Using a teaspoon, drop individual dumplings into ham mixture; cover. Boil 25 min- utes. Serves 8.
