COTTAGE CHEESE MEAT LOAF
(Microwave)
1 lb. lean ground beef
1 c. cottage cheese
1 egg
1/2 c. quick cooking rolled
oats
1/4 c. catsup
1 Tbsp. instant minced onions
1/8 tsp. pepper
1/2 tsp. salt
1/3 c. grated Parmesan cheese
1 Tbsp. prepared mustard

Combine all ingredients, except Parmesan cheese, mixing
lightly, until well blended. Press loosely into a 8 or 9-inch
square baking dish. Cook uncovered in microwave 12 to 14
minutes, turning dish once, at Full power. Sprinkle top with
Parmesan cheese and cook 1 1/2 minutes or until cheese is
melted and meat is no longer pink when sliced. Let stand
covered 5 minutes before serving. Cut in squares. Makes 6
servings.
