STUFFED MANICOTTI

1/2 lb. ground beef
1/4 c. onions, chopped
1/2 large garlic clove, minced
1 1/2 tsp. basil
3/4 tsp. salt
dash of pepper
1 (6 oz.) can tomato paste
1 c. water
1 Tbsp. parsley
1 1/2 c. cottage cheese
1/3 c. Parmesan cheese
1 egg, slightly beaten
2 Tbsp. parsley
1/4 tsp. salt
dash of pepper

Boil water and manicotti shells until tender. Brown
beef in a skillet and drain off fat. Add onion, tomato paste,
water, 1 tablespoon parsley, basil and spices (garlic, 3/4
teaspoon salt and dash of pepper). Simmer, uncovered, for 30
minutes. Combine cottage cheese, egg, 2 teaspoons parsley, 1/4
teaspoon salt and pepper. Stuff shells with cheese mixture.
Pour half of meat mixture into square pan. Arrange the shells
on top of sauce. Pour remainder of sauce on top. Sprinkle
with Parmesan cheese and parsley. Bake 1/2 hour at 350 degrees.
