CHICKEN SAUCE PIQUANTE
(For 10 People)
2 cans Ro-Tel tomatoes
3 cans tomato sauce
2 (5 lb.) hens
4 large onions
2 bell peppers
salt
pepper (red and black)
garlic powder
cooking oil
4 Tbsp. roux
flour

Cut up hens into pieces and season with salt, pepper and
garlic powder. Dice onions and bell peppers. Make roux in
skillet. Pour oil and flour into skillet. Put on stove, on
medium heat; stir often until it gets a dark brown color.
Place chicken in pot; brown in cooking oil. Take chicken out;
put aside. Place onions and bell pepper into pot and saute.
Add Ro-Tel and tomato sauce.
Cook for 1/2 hour. Add approximately 2 cups water;
bring to boil, then add chickens and cook until tender, approx-
imately 2 hours. You may have to add more water, depending on
how much sauce you need. You may use Italian sausage and cube
steak also with the chicken. Serve on rice.
