MICROWAVE TACO CASSEROLE

1 lb. ground beef
1 medium onion, chopped
1 (16 oz.) can refried beans
1 (8 oz.) can tomato sauce
2 Tbsp. taco seasoning
1/2 c. water
8 oz. tortilla chips
1 c. shredded Cheddar cheese
shredded lettuce
sliced black olives
chopped tomatoes
chopped onion
shredded Cheddar cheese
(additional)
taco sauce

Crumble ground beef into microwave safe colander. Set
in bowl or pan. Add onion and cook on Full power 5 minutes,
stirring halfway through. In 2-quart microwave safe container,
combine beans, tomato sauce, taco seasoning, water and cooked
ground beef and onions. Cook 6 to 7 minutes, covered, on Full
power, stirring once. Crush chips; sprinkle on bottom of 9 x
13-inch pan. Pour hot meat mixture evenly over chips; sprinkle
with cheese. Cook on Medium High for 2 1/2 to 3 minutes or
until cheese is melted.
Sprinkle shredded lettuce, sliced black olives, chopped
tomatoes, chopped onion, shredded cheese and taco sauce over
top before serving or serve all these in bowls on the side.
Serves 6 to 8.
