CHICKEN CACCIATORE 1 box Uncle Ben's long and wild rice 1 large stalk celery, chopped 1/2 c. chopped onion 1 green pepper, chopped chunk of oleo 1 can mushroom soup 1 can pimentos 3 c. cubed chicken or turkey 1 c. grated cheese Cook rice in chicken or turkey broth, according to directions on package. Set aside. Saute celery, onion and pepper in chunk of oleo; add mushroom soup. Mix well. Stir in pimentos and cubed chicken or turkey. Add rice mixture. Put in 9 x 13-inch dish; cover with 1 cup grated cheese. Bake at 350 degrees for 35 minutes. May be frozen.
