CHICKEN AND RICE CASSEROLE

2 Tbsp. butter
1 c. dry uncooked rice
1 whole chicken or 2 chicken
breasts
1/2 tsp. salt
pepper, if desired
1 can mushroom soup
1 can cream of chicken soup
1 can Milnot
1 c. water
1 pkg. dry onion soup mix

Melt 2 tablespoons butter in bottom of loaf cake pan.
Place floured chicken on rice in bottom of pan. Mix soups,
milk and water; pour over chicken and rice. Season with salt
and pepper. Cover pan with foil and cook 1 hour in 350 degrees oven
or until chicken is done.
