SAFFRON COLORED RICE

1 c. long grain rice
2 c. water
1 tsp. salt
pinch saffron or yellow food
coloring

Combine all ingredients in 1 1/2-quart saucepan. Cook
on high until steam escapes around lid, then reduce heat to
low. Simmer 30 minutes without cover. Yields 3 cups steamed
rice.
