MARY CARROLL'S WHOLE WHEAT PIZZA

Pizza Crust:

2 Tbsp. dry yeast (3 pkg.)
1 1/4 c. very warm water
1 tsp. honey
3 c. whole wheat flour
1 Tbsp. nutritional yeast
(optional)
3/4 tsp. vegetable salt or
salt
1/4 c. safflower oil

Sprinkle dry yeast over surface of water, mixing as you
go. Add honey. Let soak for 5 minutes or so. Combine all dry
ingredients. Add oil to the yeast/water mixture. Now combine
wet and dry ingredients using a fork. Eventually I use my
hands to finish mixing and then to form a ball. (Knead it
some.) If you have time you can let it rise for 1 to 2 hours in
an oiled bowl and knead it down again, but you can use it right
away. Divide dough into 2 balls and then roll out each ball
onto a greased/dusted cookie sheet (either with rolling pin or
hands).

Topping:
16 oz. can tomato sauce (maybe
more)
8 oz. tomato paste
2 to 3 tsp. Italian seasoning
1/2 tsp. pepper
1/2 c. chopped onion
1 clove minced garlic
1/4 c. water
Mix all "topping" ingredients together.
To make the pizza, first spread the dough on a cookie
sheet. Then spread the sauce over the dough. Next put on as
many layers of cheeses as you want. (Mozzarella, Cheddar,
Swiss, etc.) Then, add slices of onions, mushrooms, peppers,
pineapple chunks, etc. Finally top pizza with a layer of
Parmesan cheese. Bake at 450 degrees for 15 minutes.
This is a fun family recipe, as everyone can help with
the mixing, chopping, and decorating of the pizzas.
