BEEF CASSEROLE 1 1/2 lb. ground beef 1/4 c. chopped onion 1 (12 oz.) can whole kernel corn 1 can cream of chicken soup 1 can mushroom soup 1 c. sour cream 1/4 c. chopped pimento (optional) 3/4 tsp. salt 1/4 tsp. pepper 3 c. cooled noodles 1 c. bread crumbs (optional) Lightly brown beef; add onion. Mix corn, soups, sour cream, pimento, salt and pepper. Mix well with meat mixture. Stir in cooked noodles. Pour into casserole and top with bread crumbs that have been mixed with 3 tablespoons of melted butter. Bake at 350 degrees for 30 minutes. Serves 10 to 12. This recipe is great for freezing uncooked. Allow extra cooking time for frozen casserole. Do not freeze with bread crumbs; add after casserole has begun to thaw.
