VEGETABLE BEEF STEW 1 lb. ground beef 1 c. chopped onion 1 clove garlic, minced 1 (15 oz.) can kidney beans, drained 1 c. sliced carrots 1 c. sliced celery 1/2 c. uncooked regular rice 4 c. tomato juice (or tomatoes) 2 beef bouillon cubes 1 Tbsp. parsley flakes 1/2 tsp. dried basil 1/8 tsp. pepper 1 (16 oz.) can green beans Microwave oven at High setting. Slice carrots and let them cook 5 minutes in about 2 tablespoons of water, while preparing the other ingredients (they take longer to cook). Cook ground beef on stove and drain the grease. Then mix into 3-quart or large dish all ingredients, except the green beans. Cover and microwave for 29 minutes. Add green beans and cook 10 more minutes. Note: If you cook on a regular stove, increase tomatoes or add more liquid.
