HAM WITH POTATOES AND EGGS 1/3 c. chopped onion 1/2 c. cooked ham (or bacon) 5 to 6 sliced boiled potatoes 3 eggs, beaten slightly 1/4 c. milk salt and pepper to taste Melt 2 tablespoons of fat in skillet; partially fry onion. Add ham and potatoes. Fry until mixture is hot; reduce heat. Beat eggs; add milk, salt and pepper. Pour eggs over potatoes; cover skillet. Cook until eggs are done, turning potatoes and eggs occasionally. Serve immediately. Yields 6 servings.
