6 English muffin halves
6 slices baked ham
1/2 lb. grated Mozzarella
2 envelopes French Hollandaise
Place English muffin halves in rectangular 2-quart baking dish,
that has been sprayed with a nonstick coating. Top each half with
piece of baked ham. Make a circle, with high sides, of Mozzarella
cheese on top of each ham slice, leaving a whole in the middle, so the
ham can still be seen. Break an egg into each cheese "well." Prepare
the envelopes of French Hollandaise sauce mix. Cover the cheese and
eggs with sauce, leaving egg yolks exposed. Sprinkle top of whole dish
with Parmesan cheese and paprika. Bake for 30 minutes at 350 degrees. Serves
