KENTUCKY VEGETABLE CASSEROLE

1 c. flour
1 1/2 tsp. baking powder
1/2 tsp. salt
2 Tbsp. shortening
1/2 c. milk
2/3 c. milk
2 Tbsp. pimento
3 c. mixed vegetables, cooked
1 can cream of celery soup
1 c. grated Cheddar cheese

Sift dry ingredients; cut in shortening. Add 1/2 cup
milk. Roll dough 8 x 12-inches oblong. Sprinkle cheese over
dough. Also put pimento on cheese. Roll like a jelly roll.
Cut 1-inch thick slices. Combine the soup with 2/3 cup milk
and vegetables. Bring to a boil and pour in 6 x 10-inch baking
dish. Arrange cheese rolls on top. Bake at 400 degrees for 20 to 25
minutes. Serves 5 or 6 people.
