BAKED LASAGNA CASSEROLE 1 lb. ground beef 1 clove garlic, chopped 1/2 tsp. salt 2 cans (6 oz. each) tomato paste 2 Tbsp. olive oil 2 eggs 1/2 tsp. pepper 8 oz. Mozzarella cheese, sliced thin grated Parmesan cheese 1 medium onion, minced 1 tsp. parsley, chopped 2 c. water 8 oz. lasagna noodles 3/4 lb. Ricotta cheese or 24 oz. creamed cottage cheese In a heavy pan, brown ground beef in oil with onions, garlic and parsley. Add tomato paste, 2 cups water, salt and pepper and simmer for 35 minutes. Cook noodles as directed. Mix eggs with Ricotta or cottage cheese. Use a 13 x 9 x 2-inch pan. Spread 1/2 cup sauce, add a layer of noodles, then a layer of egg mixture and Mozzarella cheese. Repeat until pan is full. Top with Parmesan cheese. Bake at 375 degrees about 30 minutes. Makes 8 servings.
