SCALLOPED POTATOES 6 potatoes, sliced 1 onion, chopped 2 tsp. salt pepper 3 Tbsp. butter 2 Tbsp. flour 2 c. hot milk 3/4 c. grated cheese Melt butter in double boiler/saucepan. Add flour, seasoning and stir smooth. Slowly add the hot milk, stirring constantly. When it thickens, melt the grated cheese in the sauce. Into a buttered baking dish or casserole dish put layers of the sliced potatoes, onions and cheese sauce, repeat- ing until all ingredients are used. Bake 1 hour at 350 degrees. Serves 6 to 8.
