STUFFED ARTICHOKES

3 large artichokes
1/4 lb. ground beef
1 small onion, finely chopped
1 clove garlic, minced
1 c. seasoned dry bread crumbs
1/2 c. olive oil
3 Tbsp. grated Parmesan cheese
1/2 tsp. salt

Wash artichokes. Cut off stems at base, remove and
discard small bottom leaves. Cut off a 1-inch horizontal slice
from top of each artichoke. With scissors trim tips of leaves.
In large pan cook beef, onion and garlic over medium-high heat
until beef is browned. Remove the pan from heat. Add bread
crumbs, olive oil, cheese and salt. Pull leaves of artichokes
down to open; do not pull off. Fill each leaf with mixture.
Stand artichokes upright in large saucepan. Add enough water
to come to 3 1/4-inches up side of pan.
Over high heat bring to a boil. Reduce heat to low;
cover and simmer, basting occasionally for 40 minutes or until
tender.
