ZUCCHINI POT PIE

5 eggs, beaten
1/2 c. oil
4 c. shredded zucchini
1 1/2 c. Bisquick mix
1 tsp. baking powder
1 small clove garlic, crushed
1 small onion, diced
1/2 tsp. sweet basil
1/2 tsp. parsley
salt to taste
pepper to taste

In a bowl mix with spoon eggs, oil, shredded zucchini
and cheese. Stir in Bisquick and baking powder. Add garlic,
onion, basil, parsley, salt and pepper. Bake in a 9 x 13-inch
pan in preheated 350 degrees oven for 45 minutes.
