SALMON STUFFED TOMATOES (Serves 6) 1 (15 1/2 oz.) can salmon, drained 1/3 c. sliced green onion 1/3 c. chopped celery 6 large tomatoes 2/3 c. sour cream salt and pepper salad greens thinly sliced cucumbers Combine together salmon, onion and celery. Chill. Cut off top of tomatoes and scoop out center to form cup. Chill. Just before serving, sprinkle inside of tomatoes with salt and pepper. Fold sour cream into salmon mixture. Spoon into tomato cups. Serve on salad greens surrounded by cucumbers.
