SPINACH PIE 1 (10 oz.) pkg. frozen chopped spinach 1 c. cottage cheese 2 eggs, slightly beaten 1 tsp. salt 1/4 tsp. pepper 3 Tbsp. grated Parmesan cheese 1 Tbsp. butter Cook spinach and drain. Add cottage cheese, eggs and seasonings. Spoon into 8-inch pie pan. Sprinkle with grated cheese and dot with butter. Bake in preheated oven at 325 degrees for 3 minutes.
