WINE-BRAISED ZUCCHINI
(Serves 4)
1 Tbsp. olive oil
4 medium zucchini, thinly
sliced
1/2 c. minced shallots
1 tsp. basil leaves
1/2 tsp. each salt and pepper
1/2 c. dry white wine
1 tsp. lemon juice

In 10-inch skillet, heat oil. Add zucchini, shallots,
basil, salt and pepper and saute for 3 minutes. Add wine and
lemon juice, cover and let simmer, stirring occasionally for 10
minutes.
